In a unique twist on Mothering Sunday, one of Chelmsford’s most popular destination restaurants will be helping couples show their love and appreciation for both the mothers in their lives.
With Mother’s Day celebrated in over 46 countries across the globe, the ancient event gets bigger each year and on Saturday 30th and Sunday 31st March, restaurateur Katie Squire and her mother Sara, manager Zoe Strong and talented chef Dan Pitts will lay on not just a day, but a weekend of gastro delights for both mothers and mothers-in-law.
Saturday 30th March will be dedicated specifically to mothers-in-law who can choose from a brunch which includes smashed avocado, Eggs Royale and the ‘naughty butty’ with bottomless Prosecco, while on Mothering Sunday, a roast lunch will be available for the traditionalists along with Dan Pitts’ fabulous brand of gastronomy which includes dishes like chalk stream trout with horseradish crème fraiche, apple and beer and bacon crumb followed by banana custard with dates, banana brûlée and pistachio ice-cream.
In just two years, Katie Squire – a member of four generations of the Stubbings family who have owned Channels since 1929, has created the 80 cover award-winning restaurant out of a former 15th century golf clubhouse. Aside from transforming the ancient building into a delightful restaurant space, she, and her ‘dream team’ which includes her mum, have quickly established a reputation for culinary excellence at the Bar & Brasserie and a calendar of popular dining events that mark the year’s most important special occasions such as Mother’s Day.
Katie Squire explains, “With special occasions like Christmas and Mother’s Day it’s often difficult to get members of the family together on one day so we decided to create something for both mum and mum in law! After all, Mother’s Day is a very special day designed to celebrate motherhood and honour all the mother figures in your life.
“Channels Bar & Brasserie is a destination restaurant. We work hard to offer so much more than fine dining alone, we create experiences, and let’s face it, what could be more pleasurable for most mums than a fabulous meal in a delightful location followed by a walk around our picturesque gardens and grounds. However, for Mum and I this Mother’s Day, it will be a another weekend of hard work”!
